"So Good" Beet Salad
Ingredients:
3 medium beets, washed and peeled
2 medium carrots,
1 crispy firm type apple, cored
2 tablespoons non-sweetened coconut shred
1/4 lb mixed greens
3 tablespoons slivered almond, toasted
Instruments:
Salad bowl
Mandoline/shredder (if you do not have one you could use a shredder but the vegetables look nicer when julienned. A food processor with a julienne blade would work great as well)
Directions:
Just shred raw beets, carrots, apples and add coconut shred, then put on top of mixed greens and sprinkle with the almonds. SO GOOD and REFRESHING!
